This isn't a recipe as much as an idea.
Last week I had a hankering for peanut sauce - its the kind of craving that can just creep up on me out of nowhere. I was immediately inspired by our blogger potluck when Michelle brought her cold curry peanut noodles. Since I am a lover of all things peanut butter - I had a few jars in the house. I also had all the ingredients I needed for Rafe's mom's peanut sauce recipe.
Once I made the peanut sauce, Rafe diced and cooked up a chicken breast, while I chopped up all the veggies that we had in our fridge: red pepper, cucumber, broccoli, and carrots. Then I cooked up some whole wheat linguine and quickly steamed the broccoli. I tossed it all together with some of the peanut sauce and the pasta cooking water to thin it a bit.

I steamed the broccoli, but all of the other veggies are crispy and raw - the dish is served room temp.
This was a simple supper to throw together, and the leftovers made a great lunch the next day. We still have peanut sauce left - and Rafe has requested that I make it again this week - that's a sure sign of a hit!
